Roasted marinated baby marrows
with garlic and mint
Roasted baby marrows with garlic and mint
  • 500g baby marrow, cut in half lengthways
  • 2 shallots finely chopped
  • 8 cloves garlic, finely chopped
  • 10 mint leaves, thinly sliced
  • salt and pepper
  • 50ml olive oil
  • 1 small chilli, finely chopped
  • Heat a large saucepan.
  • Add olive oil and pan-fry the baby
    marrow until light brown.
  • Add garlic, shallot and sauté for 2 minutes.
  • Remove from heat, add chillies, mint, salt and pepper.
  • Serve hot or cold.
Roasted peeled peppers with
olive oil and star aniseed
Roasted peeled peppers with olive and star aniseed
  • 4 yellow and 4 red peppers,
    roasted, peeled and de-piped
  • 2 shallots, thinly sliced
  • 2 star aniseed, finely ground
  • 4 cloves garlic, finely chopped
  • Salt and pepper
  • 80ml olive oil
  • 4-6 basil leaves, thinly sliced
  • Cut peppers into blocks.
  • Place into a bowl, add shallots, garlic, star aniseed, salt, pepper, olive oil and basil.
  • Leave to marinate for an hour before serving.
  • Serve cold.
