Roasted marinated baby marrows with garlic and mint |

- 500g baby marrow, cut in half lengthways
- 2 shallots finely chopped
- 8 cloves garlic, finely chopped
- 10 mint leaves, thinly sliced
- salt and pepper
- 50ml olive oil
- 1 small chilli, finely chopped
|
- Heat a large saucepan.
- Add olive oil and pan-fry the baby
marrow until light brown.
- Add garlic, shallot and sauté for 2 minutes.
- Remove from heat, add chillies, mint, salt and
pepper.
- Serve hot or cold.

Roasted peeled peppers with olive oil and star aniseed |

- 4 yellow and 4 red peppers,
roasted, peeled and de-piped
- 2 shallots, thinly sliced
- 2 star aniseed, finely ground
- 4 cloves garlic, finely chopped
- Salt and pepper
- 80ml olive oil
- 4-6 basil leaves, thinly sliced
|
- Cut peppers into blocks.
- Place into a bowl, add shallots, garlic, star
aniseed, salt, pepper, olive oil and basil.
- Leave to marinate for an hour before serving.
- Serve cold.
